Chocolate Coconut Pizzelles
This one is for the books!
I thought about this recipe for some time before deciding to make the first batch. There were taste testers available (on standby), to collaborate and give me their opinions. The recipe had to be rethought and reworked because the first few tests didn’t come out as planned. I would say they came out perfect on about try #5.
Pizzelles have always been one of my favorite cookies. I used to help Grandma make tons of them for the holidays. …incredible memories! Grandma and Aunt Lena would be making the pizzelles, while mom, Aunt Annie, and I would put jelly between them to make the best sandwich cookie in history.
Hopefully you will love this recipe as much as I do, and it brings great memories to you and your family.
Ingredients:
2 large eggs
Blend; add to the following blended:
1/4 cup sugar
1/4 cup tablespoons unsweetened coconut
1.5 tablespoon cocoa powder
...then add
pinch o f salt
1/2 teaspoon vanilla
1/4 cup butter(melted, but not hot)
1/2! cup tablespoons unsweetened shredded coconut
...then
7 ounces (by weight) all purpose flour
cook pizzelles in a pre-heated hot iron to desired taste...30-40 seconds.
